Lunch is my favourite meal of the day. It's important that wherever you are at lunchtime, you make time to show show yourself some love by having a lovely meal.
And I'm not talking about a sandwich.
Huge salads, home-made soup, noodles with veg and home-made peanut dressing, wraps with roasted peppers, onions finished with ham and feta cheese - all of them are lipsmackingly lovely.
Today it was the turn of Broccoli Gribiche from one of my favourite cookbooks, Super Natural Every Day by Heidi Swanson (she of 101 Cookbooks fame).
It was delicious. Roasted potatoes and broccoli together with a dressing and hard boiled eggs. Really, what's not to love? Except the portion size. I had reduced it as the recipe was for six. Next time I shall just halve it. I mean, eating one for three people isn't too piggy...

I too try to avoid sandwiches at lunch time, unless of course it is an especially delicious and well thought out sandwich! I find it hard to find time to cook at lunch time though with a couple of Smalls hungry for their absolute favourite meal of all time (sandwiches) so I make a point of having leftovers of what ever yumminess we had for tea the previous evening plus a handful of salad (from the garden at the mo) and some other bits and pieces. It's a pretty good compromise. Looks like a fab book, thanks for the recommendation. xx

that does found fab and you are right I think if you really enjoy and savour a meal you are less likely to want to snack. I just havent find the answer for pack lunches yet

You snuck up on me there. I have been checking back now and then for a post, and now I find two posts! Your lunches do sound lovely, but I would have for my evening meal. I'm a northerner, so I would call it 'tea'. I make a big deal of all mealtimes. I love my porridge with honey and tahini on wholemeal toast and a huge pot of tea for breakfast. And I actually really like sandwiches and a chocolate biscuit (and more tea) for lunch. If for some reason I have something different for lunch, not sandwiches, I feel deprived. And even though I almost always eat my evening meal (tea) alone I still cook myself a proper meal, and always have 'pudding'. I hadn't thought of it as showing myself some love, but you are right - it is.

Oh, yum. I'm in the middle of getting-ready-to-move-house so lunch was a cup of coffee and a couple of stray crumpets. That sounds heavenly.
